Ingredients :

Lime wedges and sliced avocado and (as required)
6 whole warmed wheat tortillas (8 inches)
1 beef flank steak (approximately 680 g)
2 large tomatoes, seeded and chopped
1 jalapeno pepper, seeded and minced
1 large onion, halved and chopped
3 tbsp minced and fresh cilantro
2 tsp ground cumin, divided
120 g diced red onion
¾ tsp salt, divided
60 ml lime juice

Directions :

1. For the salsa, put the minced cilantro, jalapeno pepper, lime juice, red onion, and tomatoes in a small bowl.
2. Add ¼ tsp of salt and 1 tsp of cumin and stir. Let sit until serving.
3. Preheat the air fryer to a temperature of 205 °C. Drizzle the steak with the remaining salt and cumin.
4. Transfer the steak onto a greased tray in the air fryer basket. Cook for 6 to 8 minutes on each side until the meat reaches your desired doneness. For a medium-rare, the internal temperature should reach 57 °C, the medium should be 60 °C and the medium-well should be 63 °C. Transfer from the basket and allow to sit for 5 minutes.
5. In the meantime, put the onion on the tray of the fryer basket. Cook for 2 to 3 minutes, stirring once until they’re crisp-tender.
6. Thinly slice the steak across the grain. Then serve in tortillas along with salsa and onion. You can serve it with lime wedges and avocado if you like.
