Ingredients :

2 medium sweet potatoes
4 slices of cooked bacon
2 green chopped onions
2 tsp olive oil
1 small sliced tomato
60 ml whole milk
Pepper and salt
4 eggs

Directions :

1. Wash the sweet potatoes, then add 3 to 4 knives to them. Heat in the microwave for 6 to 8 minutes, depending on size, until tender.
2. Cut potatoes in half lengthwise with an oven mitt. Scoop potato flesh out and leave ¼-in. around the edges. Set aside scooped potatoes for another use.
3. Brush olive oil onto the potato skins and drizzle with sea salt. Place skins in your fryer basket and air fry for 10 minutes at 205 °C.
4. In the meantime, add the milk, eggs, pepper, and salt to a non-stick skillet. Over medium heat, cook the mix while stirring continuously until no liquid eggs are visible.
5. Add a slice of crumbled bacon and ¼ of scrambled eggs onto each cooked potato skin.
6. Top with shredded cheese. Place back into the basket of your air fryer and let it cook at 205 °C for 3 minutes or until the cheese has melted.
7. Top with tomato and green onion and serve.
