Ingredients :

6 large eggs, hard-boiled & chopped
80 g shredded cheddar cheese
120 g slice of fresh asparagus
1 tbsp fresh tarragon minced
420 g panko bread crumbs
120 g sliced green onions
3 tbsp all-purpose flour
180 ml 2 percent milk
3 large beaten eggs
Cooking spray
3 tbsp. butter
¼ tsp pepper
¼ tsp salt

Directions :

1. Melt the butter in a large saucepan over medium heat. Add flour and stir until smooth. Cook while stirring for 1 to 2 minutes until browned lightly. Slowly whisk in the milk. Cook while stirring until the mixture is thickened.
2. Add tarragon, cheese, pepper, salt, green onions, apsara,gus, and hard-boiled eggs. Chill for at least two hours.
3. Preheat the air fryer to a temperature of 180 °C. Shape 60 g of the egg mixture into 12 long ovals of 3-in. Place eggs and bread crumbs in different shallow bowls.
4. Roll the logs in crumbs to coat them and dunk them in the egg. Roll once again in crumbs and pat to help the
coating adhere.
5. Working in batches, arrange the croquettes on a greased tray in the fryer basket in a single layer. Drizzle with
cooking spray. Air fry for 8 to 10 minutes until golden brown.
6. Flip and drizzle with cooking spray. Continue to cook for 3 to 5 minutes until golden brown.
